Taking a cue from the diverse cultures that season the Caribbean kitchen, Sugar Mill's chefs have fused the many influences of the region to create a mlange of tastes that is truly Caribbean fusion cuisine. Sugar Mill Water Wheel Plaque

Erected in the mid-17th Century, this waterwheel once powered the 50,000 acres of the Running Gut sugar estate spreading from Rose Hall in the east to Little River in the west.   Originally owned by British aristocrat Benjamin Lawrence, Running Gut prospered in the Lawrence family for over 200 years until the estate was finally sold in 1885.  The property changed hands more than six times, was divided and sold to various interests in the island.  The final owner of this parcel of land was acquired by the investors of Half Moon and in 1962 the sugar plantation became the Half Moon Golf Course and the Sugar Mill Restaurant.  Although the fast running stream that once powered the mill has since slowed its flow, the waterwheel that was once the nerve of Running Gut’s sugar works was restored to glory in 1981 by William R. Saul II, chief engineer at Steuart Investments Limited, one of the original shareholders of the now 400-acre Half Moon.

Keeper of the Mill

For over 40 years, first as a bar steward and later as its maitre d’, the Sugar Mill has been ably kept by Solomon Gardener.  Graceful and meticulous, attentive and personable, nothing misses Solomon’s watchful gaze.  By his charming greeting and gentle nod he commands his army to unobtrusively attend to attend to an unforgettable dining experience.
